- Varietal Composition: Assytriko 75%, Aidani 25%
- Vinification techniques: Classic white wine vinification from sun dried grapes (10-12 days). Aging in old oak barrels for a minimum of 24 months. Vinsanto is the most genuine descendant of the “passon oinon”, as the sun dried wines were called in antiquity. During the Middle Ages the ancient volcanic Thira was renamed as Santo Erini – Santorini and thus the wine took the name Vino Santo – Vinsanto, thus declaring its place of origin. Thus, the name is a «historical name of appelation», one of the few still in existence.
- Production: 10,000 bottles (0.50lt).
- Technical data: 9% vol, residual sugar: 300 gr/lt, acidity: 8.5 gr/lt.
- Organoleptic characteristics: Bright orange-golden color. Rich and complex aroma with dominant scents of dried and sugared fruits. Exquisite structure, acidity and finesse, with a strong aftertaste.
- Aging potential: Limitless.
- Serving Suggestions: Strong cheese and dried fruit served at 11° C.
- Location of vineyard: Santorini, Oia (in the northern part of the island).
- Soil: Consists of fragments of black lava, volcanic ash and pumice. It is classified as sandy for purposes of its mechanical properties. It is poor in organic substances and nitrogen, with minimal clay and a negligible CaCo3 content.
- Age of vines: Over 50 years.
- Yield in hl per hectare: Due to the sun drying technique, is 5 - 7hl.
- Harvest: Early to mid August.
- Packaging: Boxes 12 bottles (0.50lt)

Sigalas Vinsanto 1998 Santorini 18 Drink 2004-2008
Wonderful bright orangey brown with green notes that make it look like a wine that is 20 years old not six. Very complex and concentrated. Fascinating (much more impressive than the 2000 which lacks a bit of acidity). Great balancing act of intensely sweet orange peel flavours with refreshing acidity and quite a bit of tannin. Great stuff.
